Elizabeth-

Here is the eggnog cookie recipe with the glaze - I think I NEED to make these too! LOLOL



Eggnog Cookies


Ingredients:

1 1/4 cups white sugar
3/4 cup butter, softened
1/2 cup eggnog
1 teaspoon vanilla extract
2 egg yolks
1 teaspoon nutmeg
2 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon cinnamon

Eggnog Glaze:
1 ½ cup powdered sugar
3 tablespoons eggnog

1. Preheat your oven to 300 degrees.
2. Combine the flour, baking powder, cinnamon and nutmeg. Set aside.
3. Cream sugar and butter together in mixing bowl.
4. Add eggnog, vanilla, and egg yolks. Beat at medium speed with a mixer until smooth.
5. Add the flour mixture and beat at low speed until combined. Do not over-mix.
6. Spoon onto ungreased cookie sheet or parchment paper and make the dough balls rather small because they will spread in the oven. I always test about 3 cookies in the oven first before making an entire batch. Sprinkle the cookies with nutmeg.
7. Bake 15-18 minutes, mine took 17, until the edges are lightly brown.
8. While the cookies are in the oven make the glaze by combining the powdered sugar with 3 T eggnog.
9. Drizzle the glaze over your cookies and devour!

Yummy! Thanks, Gigi. I will try these, too, provided I can hide the eggnog from my family. They disappear it rather quickly when it is in the house!

Here is a recipe for home made eggnog...I haven't tried it yet, but I got it from someone that says it's good.

4 eggs (yolks)
1/2 C sugar
2 C whole milk
1 C heavy cream
1 t vanilla extract
cloves
pinch of cinnamon

Whip egg yolks and sugar until fluffy. Heat & blend milk, cream, spices & egg mixture. After it cools add vanilla extract. Top each cup with fresh grated nutmeg, if desired.

LOL- it was Gigi's idea, I just started a thread because she's so busy. That woman is like Rachell...always busy and juggles a zillion things at a time! They amaze me :)

A double batch of Eggnog Bread is in my oven as I type! It was super easy to throw together, and smells yummy! I'll let you know how it comes out. Based on the batter I tested, it is going to be a winner!

Oh awesome - thanks for the update Elizabeth. if it's as good as it smells, and I hope it is, I may give up on the other stuff and just make that with cookies. Why do I feel so driven to make a dozen different things - that's craziness!!

Eager to hear the results. Are you putting the eggnog glaze on the top?? Oh I am really salivating now - have only had coffee so my tummy is growling......@

Gigi, this recipe (Eggnog Bread) is a definite keeper! It is delicious, and really easy. It is too good on its own to need the glaze, IMHO.

BUT, I can share my fave shortbread recipe :)

SHORTBREAD
250g butter
1 cup icing sugar
1¼ cups cornflour
1½ cups plain flour
pinch salt

cream butter & icing sugar tog until very pale & creamy
sift tog cornflour, plain flour & salt (do this 3 times)
add to the creamed mixture (add about 2/3rds using mixer)
bind in remainder of dry ingredients by hand
turn out on to a lightly floured board & knead lightly
press & roll & cut into desired shapes
bake at 180c 15-20 mins until pale golden (350F)
sift castor sugar over the top straight away
decorate as desired — e.g. glace cherries, almonds
p.s. the addition of chopped macadamia nuts to the mixture is delish!
